Apple & Strawberry Oat Breakfast Cookies - Made in the Air Fryer


Makes: 4 cookies
Total Time: ~15 minutes

Ingredients

  • 1 cup (90g) Gruo Apple & Strawberry Quick Oats
  • 1 small ripe banana, mashed (about ⅓ cup)
  • 1 tbsp coconut oil or avocado oil, melted
  • 2 tbsp milk (or oat milk)
  • 1 tbsp honey, plus extra for drizzling
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • Handful of chocolate chunks, plus extra for topping

Method

  1. Mash the banana in a bowl until mostly smooth.
  2. Add the Gruo Apple & Strawberry Quick Oats, baking powder, cinnamon, and salt. Stir to combine.
  3. Pour in the melted oil, milk, and honey. Mix until glossy and fully combined. Let the mixture sit for 2 minutes so the oats can absorb the liquid.
  4. Fold in the chocolate chunks.
  5. Divide the mixture into 4 portions. Roll into balls and flatten with the back of a spoon into rounds approximately 1.5 cm thick. Press additional chocolate chunks on top.
  6. Air fry at 180°C / 355°F for 6–7 minutes. For a softer, gooier centre, cook closer to 5 minutes. Cook in two batches of two cookies if needed to fit your air fryer basket.
  7. Let rest for 2–3 minutes, drizzle generously with honey, and enjoy.

Note

These cookies can be made using any Gruo flavour for a fun twist on the recipe.
